Season the tomato with salt and oil.
Reserve.
Cut the Parmesan into slices.
Place the crushed tomato on the bottom of the plate as a bed.
Add the smoked cod, arugula in the center and decorate with Parmesan cheese, cherry tomatoes and lumpfish roe.
